You really don’t need to measure a thing to make this and I actively encourage you don’t, because that would be much less fun. And making this is bloody fun – if you’re prepared to embrace the mess! I also recommend a good playlist, always.
I threw together:
- A couple of large avocados
- 1 small red onion
- 3 red chillis
- 2 large handfuls of cherry tomoatoes
- An entire coriander plant (because I’m obsessed)
- The juice of 1 lime
- A healthy dose of salt & pepper
Adjust as you please.
The trick is to just keep smashing it up, through the spillages, through the splurges, through the avocado-infused fingers. Well – not literally on that last one.
Just keep going. That playlist will help. And you’ll end up with something like this:
Have it on toast. Throw it in a burrito. Eat it on its own. Store it in a Tupperware box and it’ll keep for at least a week in your fridge. It will be the thing you’ll most look forward to coming home to after work.
I also thoroughly recommend it on a hangover, it’s about as spicy and fresh as it gets, which is exactly what you need to repent for the prior night’s sins. And maybe some more. Because it’s that good.
You’ll never choose shop bought again.
